The company was founded in 1873. The fourth-generation president, Katsushige Andate, was his mentor, and the fifth-generation president, Takumi Ikeda (traditional craftsman), took over the business in 2021.

As the representative, he inherits the traditional forging techniques of Echizen blades, but he also has the passion to not only preserve them but also to challenge himself by moving from double-edged blades to single-edged blades.

Each and every forged knife is carefully crafted by hand by a craftsman, and it combines the beauty and functionality that only that skill can provide. The design, which is meticulous down to the smallest detail, such as the distinctive color and texture, and the carefully and calculated thickness from the handle to the tip, not only makes the knife comfortable to use, but also makes it an appealing masterpiece that can be used for many years. The quality of these knives is widely supported both in Japan and overseas, and they are highly regarded in a wide range of situations, from professional chefs to home kitchens.

Founded in 1873, our company was passed from our mentor, 4th-generation mastercraftsman Katsushige Andachi, to 5th-generation traditional craftsman Takumi Ikeda in 2021.

As a representative of Echizen cutlery, Ikeda inherits the traditional forging of hammered single-edged blades, and adds his passion for the challenge of making double-edged blades.
