While respecting history and tradition, Toshitaka works with experienced craftsmen in pursuit of sharpness and long-lasting cutting ability, creating knives with the spirit of "dedication to knives and putting one's heart and soul into each knife."

Toshitaka's wish is for people to use good knives to enjoy cooking and make everyone smile. His sharpening techniques are known for being extremely high. Although the craftsmen in Seki City are mass-produced, they pay close attention to detail and finish each knife beautifully.

My meeting with Toshitaka came about through an introduction.

Toshitaka took over from his grandfather in his late 30s. He used to make kitchen knives for trading companies, but he felt he couldn't continue like that and started his own brand. He said that he became determined to create his own brand while working on attaching handles and polishing them.

The high level of our sharpening techniques means that, although there may not be any visible difference from other companies' sharpening techniques, when looked at by an expert, the difference is immediately obvious.
