About Kosuke Muneishi

Muneishi inherited a blacksmithing business that had been in operation for 65 years. While the first and second generations focused mainly on making hatchets, Kosuke Muneishi began making knives in earnest. Building on the techniques passed down through generations, he tirelessly experimented and taught himself, striving for the "kuro-uchi" (black-forged) finish that he found beautiful. His knives are characterized by the strength typical of Tosa cutlery combined with refined beauty. Muneishi's knives are designed not only for their sharpness but also for their flexibility, ease of sharpening, and even ease of maintenance. He continues to pursue a new aesthetic in Tosa Uchihamono, aiming to create knives that are chosen because "Tosa Muneishi is the best."

About the Santoku Knife

The Santoku knife, also known as an "all-purpose knife," combines the characteristics of a Nakiri (vegetable knife) and a Gyuto (chef's knife). It is suitable for cutting a wide range of ingredients, including vegetables, fruits, meat, and fish. Having just one Santoku knife is incredibly convenient.

What is Aogami #2 Steel?

Aogami steel is a type of Japanese steel, specifically an alloy steel made by adding chromium and tungsten to Shirogami steel, which is itself a type of Yasugi steel. Aogami #2 contains a high amount of carbon, making it hard and tough, and it is a high-grade steel known for its excellent wear resistance.
