About Santoku Knives
Santoku knives are also called "all-purpose knives" because they have the characteristics of both a vegetable knife and a chef's knife, and are suitable for cutting a wide range of ingredients, including not only vegetables and fruits, but also meat and fish. Having one Santoku knife is very convenient.
What is Aogami Super Steel?
It is one of the Yasugi steels produced by Hitachi Metals. The steels generally used for knives are blue paper steel and white paper steel, but the most expensive of these is blue paper super steel, which is said to be the pinnacle of steel.
In addition to its toughness and hardness, it also has excellent wear resistance, making it a popular steel material with hardness comparable to that of high-speed stainless steel.
