About vegetable knives
This vegetable knife is ideal for cutting vegetables. The rectangular blade allows you to cut vegetables with minimal residue.
What is Aogami Super Steel?
This is one of the Yasugi steels produced by Hitachi Metals. The steels generally used for blades are blue paper steel and white paper steel, but blue paper super steel is the most expensive of these and is said to be the pinnacle of steel.
It has excellent wear resistance in addition to tenacity and hardness. It is a popular steel material with hardness comparable to that of high-speed stainless steel.
