About Santoku knives

What is VG1 steel?
Made from Takefu Special Steel, it has excellent abrasion and corrosion resistance. Although it is an easy-to-sharpen steel, by forging it by hand, the craftsman's hands increase its hardness, making it resistant to bending and providing excellent cutting sharpness.
