What is Kosuke Muneishi?

Inheriting a blacksmithing business that has been around for 65 years, the first and second generations mainly focused on making hatchets. However, with Mr. Muneishi, the business shifted to full-scale knife production. Based on the techniques passed down for many years, he pursued what he considered to be beautiful kuro-uchi finishes through self-taught trial and error. His knives are characterized by the strength typical of Tosa cutlery and refined beauty. Mr. Muneishi's knives are not only sharp but also flexible, easy to sharpen, and designed with ease of maintenance in mind. He continues to pursue a new aesthetic for Tosa uchihamono, aiming to create knives that are chosen because "Tosa Muneishi is good."

About Santoku Knives

The Santoku knife is also known as an "all-purpose knife" because it combines the features of a nakiri (vegetable knife) and a gyuto (chef's knife). It is suitable for cutting a wide range of ingredients, including not only vegetables and fruits but also meat and fish. Having just one Santoku knife is very convenient.
