About Santoku knives
A Santoku knife is also known as an "all-purpose knife" that combines the features of a vegetable knife and a chef's knife, and is suitable for cutting a wide range of ingredients, including not only vegetables and fruits, but also meat and fish. Having just one Santoku knife is very convenient.
What is VG1 steel?
Made from Takefu Special Steel, it has excellent abrasion and corrosion resistance. Although it is an easy-to-sharpen steel, by forging it by hand, the craftsman's hands increase its hardness, making it resistant to bending and providing excellent cutting sharpness.
